Sherry – What is it? Sherry is a fortified wine produced in the region around Jerez de la Frontera in Andalusia, Spain. It is made from white grapes such as Palomino, Pedro Ximénez and Moscatel and gains its distinctive flavour through a special maturation method known as the Solera system. The Solera system involves blending wines from different vintages in a series of barrels, each barrel containing wine of a different age. This process gives sherry a complex palette of aromas ranging from dry and nutty to sweet and fruity. There are various types of sherry, including: 1. Fino: A dry, pale sherry protected by a natural layer of yeast (flor) that forms on the surface of the wine. 2. Amontillado: A sherry that initially ages like a Fino but later undergoes oxidative ageing, giving it a darker colour and richer flavour. 3. Oloroso: A dark, full-bodied sherry that has aged oxidatively and often exhibits a rich aroma of nuts, spices and dried fruit. 4. Pedro Ximénez (PX): A sweet sherry made from the Pedro Ximénez grape and often displaying notes of raisins, caramel and chocolate. Sherry is often enjoyed as an aperitif or digestif and can also be used for cooking and in cocktails.
