Mai Tai – the Recipe Rezept

The Mai Tai is no cocktail for half-measures: two rum styles – white rum for freshness, dark rum for depth – meet almond syrup, lime, and pineapple. The result is sweet-sour, fruity, and lightly nutty, with a bold rum base that doesn’t hide. Use cheap rum here and you’ll get a sweet lemonade taste – the real Mai Tai lives on the quality of the spirits. A drink that tastes like holiday, but only works if you don’t drown it in sugar.

Here’s what you need for the Mai Tai

3 cl white Rum

3 cl dark Rum

2 cl Apricot Brandy

Juice of half a lime (approx. 2 cl)

2 cl pineapple juice

1.5 cl almond syrup (orgeat)

1 dash Angostura bitters (optional, for finishing)

What matters most

The almond syrup (orgeat) is the heart of the Mai Tai – but it shouldn’t dominate. If you make it yourself, don’t make it too sweet: 1 part sugar to 1 part almond milk, with a touch of orange blossom water and a pinch of salt. Ready-made syrups are often too sticky; then use 1 cl less. Important: the dark Rum must be at least 40 % ABV, otherwise its aroma gets lost in the mix. And the crushed ice? Not too fine – it should melt slowly and chill the drink without diluting it too much. No crushed ice? Pulse ice cubes in a blender until you reach the right consistency.

Variations

  • Mai Tai with Cachaça — Replace the white Rum with Cachaça for a Brazilian touch. The sugarcane spirit brings more grassiness and a slight acidity that pairs well with the almond syrup. Keep the dark Rum, but adjust the quantities: 2 cl Cachaça, 4 cl dark Rum.
  • Dry Mai Tai — For a less sweet version, reduce the almond syrup to 1 cl and add 0.5 cl simple syrup. Replace the pineapple juice with 1 cl grapefruit juice for more bitterness and freshness.

Common questions

Can I leave out the Apricot Brandy?

Yes, but the drink loses complexity. Apricot Brandy adds a subtle fruit depth that supports the Rum. If you don’t have it, you can use 0.5 cl more dark Rum or 1 cl peach liqueur – but then the Mai Tai will be sweeter.

Why does my Mai Tai taste like lemonade?

Probably the Rum is too weak or the almond syrup too dominant. Use high-quality dark Rum (at least 40 % ABV) and make sure the syrup isn’t too sweet. The lime juice must be freshly squeezed – bottled juice tastes flat and artificial.

Can I pre-mix the drink?

Not recommended. The Mai Tai lives on the freshness of the ingredients, especially the lime juice. If you must prepare it ahead, mix everything except the pineapple juice and the ice; add those just before serving. In the fridge, the mix holds for a maximum of 4 hours.
