Elderflower Lemonade – the Recipe Rezept

This elderflower lemonade is more than just a simple refreshing drink: it captures the scent of the blossoms and combines it with the acidity of the lemon and the sweetness of sugar. The trick lies in letting it steep – not too short, not too long. If you like, add a splash of soda water to make the lemonade more effervescent. Perfect for warm days or as a base for longer drinks.

And here’s what you’ll need for the elderflower lemonade

10 fresh elderflower clusters

2 organic lemons

100 g sugar (or 80 g honey for a milder version)

1 litre still water

optional: 100 ml soda water

What matters most

The secret lies in the selection of the blossoms: the fresher and more fragrant the elderflowers, the more aromatic the lemonade will be. Harvest them on a dry day, preferably at midday when the sun releases the essential oils in the blossoms. Avoid clusters that are already turning brown – they taste bitter. If you use honey instead of sugar, choose a mild, floral variety like acacia honey, which won’t overpower the elderflower flavour.

Variations

  • Elderflower Spritz — For an alcoholic version, stir in 4 cl London Dry Gin or white rum and top up with soda water. Perfect for a summer evening.
  • Elderflower Iced Tea — Replace half of the water with strong, cooled black tea. Add a handful of fresh mint leaves and let everything steep together. Sweeten to taste with a bit more sugar or honey.

Frequently Asked Questions

Can I use dried elderflowers?

Yes, but the flavour will be less intense. Use about half the amount of dried blossoms and let the mixture steep for longer – at least 48 hours. Fresh blossoms are always the better choice, though.

How long does the lemonade keep in the refrigerator?

Without alcohol, it keeps for about 3–4 days. With alcohol (e.g. gin or rum), the shelf life extends to up to one week. Make sure the jug is always well sealed.

Can I make the lemonade without sugar?

Yes, but the taste will be noticeably sharper. Replace the sugar with agave syrup or honey to balance the acidity of the lemon. Alternatively, you can sweeten the lemonade after steeping with a bit of sugar syrup.
