Glühwein on the Rocks – the Recipe Rezept

Basisspirituose
Alpro Drinks

Mulled wine doesn’t need to steam to warm you up. This drink freezes the spices without losing their depth. Dark Rum gives the mix a smoky note, while maple syrup replaces the sweetness of classic mulled wine—less sticky, more complexity. Perfect for anyone who wants to feel winter even in summer, without burning their tongue.

And this is what you need for the Glühwein on the Rocks

6 cl mulled wine (ready-made or homemade with red wine, cloves, cinnamon, star anise, orange peel)

2 cl dark Rum (at least 40 % vol.)

2 cl maple syrup (Grade B or darker for more caramel notes)

1 cl freshly squeezed lime juice

Garnish: 1 star anise, 1 cinnamon stick, 1 wide strip of orange zest (without the white pith)

Key points

The trick lies in the ice: a single, solid cube melts slower than several small ones and doesn’t dilute the drink too quickly. It’s important to let the mulled wine cool to room temperature before mixing—hot wine would shatter the ice immediately and water down the drink. If making it yourself: refine the mulled wine with a pinch of cardamom, which rounds off the Rum note. Only squeeze the orange zest just before serving, otherwise the aromas will evaporate.

Variations

  • Feuerzangenbowle on Ice — Replace 2 cl brown Rum with 1.5 cl Overproof Rum (57 % vol.) and serve with a sugar cube soaked in Rum, which is lit on fire. The caramelized sugar drips into the glass, adding a smoky-sweet note. Caution: Only serve on a heat-resistant surface.
  • Weißer Glühwein Rocks — Instead of red wine mulled wine, use a mix of white wine, white Rum, and a little vanilla syrup. Garnish: lemon zest and a pinch of grated nutmeg. Lighter, but just as aromatic.

Frequently asked questions

Can I use any mulled wine?

Yes, but avoid heavily sweetened ready-made mixes—they make the drink sticky. Homemade mulled wine with dry red wine (e.g. Pinot Noir) and little sugar works best. For a fruitier taste, use mulled wine with more orange juice, but then reduce the maple syrup to 1.5 cl.

Why does the drink taste different after the second sip?

That’s intentional. The first sip is sweet and spicy from the mulled wine, the second brings out the smoky Rum note and the acidity of the lime. The ice melts slowly and changes the balance—just like a good Whisky on the Rocks.

Can I make this drink without alcohol?

Replace the Rum with 2 cl alcohol-free Rum-flavored syrup (e.g. from the barkeeper’s corner) and the mulled wine with a mix of grape juice, spices, and a little lemon juice. The taste will be milder, but the spice remains.
