Cardamom Mulata – The Recipe Rezept

The Cardamom Mulata combines brown Rum with the warm spice of cardamom and the velvety sweetness of Crème de Cacao. The lime adds freshness, while the peel in the glass releases a citrusy aroma that blends with the Rum. A drink for those who enjoy aromatic and complex flavors – without sacrificing enjoyment. Perfect for the transition from summer to autumn, when the first spices crave more.

And this is what you need for the Cardamom Mulata

4.5 cl brown Rum

1.5 cl Crème de Cacao (brown)

1 cl sugar syrup (2:1)

3 cl freshly squeezed lime juice

1 pinch of ground cardamom

1 piece of peel from an organic lime (approx. 4 × 2 cm, without pulp)

8 ice cubes (for the shaker)

This is what matters

The cardamom is the unsung star: One pinch may sound like little, but its aroma dominates when properly incorporated. Freshly grind the cardamom pods – pre-ground cardamom from a bag quickly loses intensity. While shaking, you’ll hear a steady clacking of the ice cubes: This is the sign that the drink has received enough chill and dilution. Add the lime peel *after* straining into the glass – otherwise, the oils evaporate in the shaker and won’t end up in the drink.

Variations

  • Cardamom Mulata Tropical — Replace 1 cl of the brown Rum with 1 cl coconut syrup and add 2 cl pineapple juice. Shake, strain, and garnish with a pineapple slice. The drink becomes fruitier while retaining its spicy depth.
  • Cardamom Mulata Spiced — Add a pinch of ground cloves and a thin slice of fresh ginger (approx. 0.5 cm) to the shaker. After shaking, remove the ginger. The ginger’s heat complements the spice of the cardamom.

Frequently Asked Questions

Can I use white Rum instead of brown Rum?

Theoretically yes, but the drink loses depth. Brown Rum brings caramel and smoky notes that support the cardamom and the chocolate of the Crème de Cacao. White Rum makes the Cardamom Mulata lighter but also less complex.

Why does the lime peel go in the glass?

The peel contains essential oils that are released when rubbed over the rim of the glass. These oils combine with the alcohol vapor in the glass and enhance the drink’s aroma. Without the peel, the Cardamom Mulata tastes flatter.

Can I omit the cardamom?

Yes, but then the drink is no longer called Cardamom Mulata. Without cardamom, it becomes a simple Rum-Cacao Sour. The cardamom is the defining spice – reduce the amount rather than omitting it entirely.
