Build in the glass – what is that?

The “build in the glass” or “build directly in the glass” technique refers to a method of preparing cocktails where the ingredients are layered or assembled directly in the serving glass rather than being mixed in a shaker or mixing glass beforehand. This approach is often used for cocktails that require clear separation of ingredients to create visually appealing layers, such as the Tequila Sunrise or Pousse Café.

To build a cocktail in the glass, the ingredients are poured one after another gently over the back of a spoon into the glass to create clear separation between the layers. This requires a steady hand and some practice to keep the layers even and distinct. Once the layers are built, the cocktail can be garnished as needed.

This technique allows for visually appealing and artistic presentations that draw the attention of guests and enhance the enjoyment of the drink.
