Bird of Paradiso – the recipe Rezept

The Bird of Paradiso is a short, velvety drink that combines the sweetness of white crème de cacao and Galliano with the freshness of orange juice and the spice of blanco tequila. The cream makes it creamy without being heavy – perfect for transitioning from aperitif to digestif. Those familiar with the classic Golden Cadillac will find a tropical, slightly spicier twist with tequila instead of gin.

And here’s what you need for the Bird of Paradiso

3 cl blanco tequila

1 cl white crème de cacao

1 cl Galliano

2 cl freshly squeezed orange juice

1 cl heavy cream (min. 30% fat)

crushed ice

Key points

The cream must be ice-cold – ideally, place it in the refrigerator for 10 minutes before mixing. Only then will it blend evenly with the other ingredients without curdling. For an extra-creamy texture, you can lightly whip the cream beforehand, but not too stiff: it should still distribute in the shaker. The Galliano adds a vanilla spice that harmonizes with the tequila – don’t overdo it, or the sweetness will dominate. A splash of lemon juice (0.2 cl) in the shaker rounds off the acidity without appearing in the recipe.

Variations

  • Bird of Paradise (non-alcoholic) — replace blanco tequila with 3 cl non-alcoholic agave syrup, Galliano with 0.5 cl vanilla syrup. Increase the cream to 1.5 cl to maintain the texture. Dust with a pinch of cinnamon.
  • Spiced Bird — replace 1 cl Galliano with 1 cl spiced liqueur (e.g., with cinnamon or cardamom). Optionally, garnish with a thin orange slice dusted with a pinch of chili flakes.

Frequently asked questions

Can I use milk or oat milk instead of cream?

Milk works but will dilute faster. Oat milk gives a lighter texture but less creaminess. Better to use cream with 30% fat – it maintains the balance between fat and liquid.

Why should the glass be chilled beforehand?

A warm glass causes the drink to warm up too quickly and dilute. The chilled glass keeps the temperature longer, allowing the flavors to unfold without the first sip tasting lukewarm.

Can I make this drink with reposado tequila instead?

Reposado or añejo tequila changes the profile: the vanilla notes of the Galliano compete with the woody notes of the tequila. For the classic Bird of Paradiso, blanco tequila remains the better choice.
