Bajan Sun – the recipe Rezept

The Bajan Sun brings Caribbean sunshine to your glass: white Rum meets Mandarin liqueur and fresh juices. The blend of pineapple and orange gives the drink a sweet-sour balance, while a splash of Grenadine adds depth. Perfect for warm days or as an aperitif – light, fruity, and with a hint of exotic flair. The garnish of pineapple slice and cherry makes it visually striking.

And this is what you need for the Bajan Sun

2 cl white Rum

2 cl Mandarin liqueur

2 cl fresh orange juice

2 cl pineapple juice

1 splash of Grenadine (approx. 0.2 cl)

ice cubes

1 fresh pineapple slice (for garnish)

1 cherry (for garnish)

Key points

The trick lies in the timing of the Grenadine: add it only after straining into the glass, otherwise it will mix completely with the other ingredients and lose its visual effect. If you prefer it even fruitier, you can reduce the pineapple juice slightly – simmer it for about 30 seconds in a small pot until it becomes slightly thicker. This intensifies the aroma and gives the drink more body. Important: always use fresh orange juice, as pasteurized juice often tastes bitter and disrupts the balance.

Variations

  • Bajan Sun Twist — Replace the Mandarin liqueur with 1.5 cl passion fruit syrup and add 0.5 cl lime juice. This makes the drink more tart and gives it an exotic note. Garnish: half passion fruit instead of cherry.
  • Bajan Sun Spiced — Use 1.5 cl white Rum and 0.5 cl aged brown Rum to achieve more depth. A hint of cinnamon (a pinch of cinnamon powder in the shaker) enhances the spice. Garnish: cinnamon stick instead of pineapple slice.

Frequently asked questions

Can I prepare the Bajan Sun without alcohol?

Yes, replace the white Rum with 2 cl alcohol-free Rum or 1.5 cl almond syrup. The Mandarin liqueur can be substituted with 2 cl additional orange juice and 0.5 cl vanilla syrup. The fruity base remains, but the alcoholic sharpness is missing.

Why does my Bajan Sun taste too sweet?

Probably the Mandarin liqueur or pineapple juice is too sugary. Reduce the liqueur to 1.5 cl and use fresh pineapple juice instead of store-bought. Alternatively, a splash of lemon juice (0.3 cl) helps balance the sweetness.

Which glass is best suited?

A tall Collins glass is ideal as it provides enough space for ice and garnish. If you don’t have one, a Highball glass will do. The important thing is that the glass is chilled – simply rinse it with ice water before filling.
