A homemade soy drink that gains a lively sharpness from fresh ginger and lemon. The base made from soaked soybeans is gently heated so the flavors can blend together – not an industrial milk substitute, but a drink with character. The amount of agave syrup determines whether it becomes a tart pick-me-up or a sweet, creamy delight. Perfect for anyone who sees plant-based milk not just as a coffee accompaniment, but as a standalone taste experience.

And this is what you need for the lemon-ginger soy drink

1 cup dried soybeans (approx. 200 g)

4 cups water (for soaking and blending)

Juice of 1 organic lemon (approx. 3 cl)

1 level teaspoon freshly grated ginger (approx. 3 g)

2–3 tablespoons agave syrup (to taste)

1 pinch of sea salt

What matters here

The trick lies in the ginger: freshly grated, it develops a sharper but also more floral note than ground ginger. For a stronger flavor, let the ginger-lemon mixture steep in the warm soy drink for 5 minutes before stirring it in – this allows the aromas to develop better. Important: Do not heat the drink too strongly, otherwise the lemon will lose its freshness and the ginger will turn bitter. If desired, you can pass the liquid through a sieve lined with kitchen paper after straining to remove any remaining fine particles.

Variations

  • Turmeric-ginger version — stir ½ teaspoon turmeric powder into the warm soy drink with the ginger. Adds an earthy depth and a vibrant yellow color. Goes well with a pinch of black pepper, which enhances the turmeric’s effect.
  • Coconut-ginger soy drink — stir 50 ml coconut milk into the finished drink. Makes it creamier and rounds off the ginger’s sharpness. Ideal for those who prefer something a little more exotic.
  • Iced ginger shot — after cooling, blend the soy drink with ice cubes in a blender and pour into small glasses. Garnish with a splash of lemon juice and a pinch of chili powder – perfect as a refreshing start to the day.

Frequently Asked Questions

Can I make the drink without agave syrup?

Yes, but the agave syrup balances the lemon’s acidity and the ginger’s sharpness. For a more tart flavor, you can omit it or replace it with some maple syrup. Alternatively, a pinch of vanilla seeds works to simulate sweetness.

Why does the soy drink sometimes curdle when heating?

Soy milk curdles when heated too strongly or comes into contact with acidic ingredients like lemon juice before it is warm. Always heat the drink first, then stir in the acidity – and do not let it boil. For extra safety, add the lemon juice only after the drink has cooled.

How long does the homemade soy drink keep?

Stored in the refrigerator, it keeps for 3–4 days in a clean, sealed jar. Shake well before drinking as the ingredients can settle. For longer shelf life, it can also be pasteurized: heat for 30 minutes at 65 °C in a bain-marie.

Can I reuse the leftover pulp?

Yes, the soy pulp works well for veggie burgers, muffins, or as an egg substitute in vegan baking recipes. Simply let it dry or freeze it. It still contains plenty of protein and fiber.

Zubereitung
