Tequini – the recipe Rezept

The Tequini is the Martini for everyone who loves Tequila but wants something different from a Margarita or Paloma. Here, the clear, peppery Blanco Tequila meets the dry, herbal Vermouth Dry – a drink that surprises on the first sip and wins you over on the second. The Angostura adds a subtle bitterness that doesn’t overpower the Tequila but instead puts it in the spotlight. Perfect for anyone looking to start their evening with a cocktail that can do more than just sweet or sour.

And this is what you need for the Tequini

6 cl Blanco Tequila

1 cl Vermouth Dry

1 dash Angostura Bitters

Ice cubes

Lemon peel (as a spiral)

This is what matters

The trick lies in stirring: Blanco Tequila is sensitive to too much movement. If you shake it too hard or stir it for too long, it loses its clear, peppery note and tastes flat and alcoholic instead. Stir it just long enough to chill the mixture – you’ll know it’s ready when the mixing glass slightly fogs up on the outside. And always use fresh ice. Ice cubes from the freezer tray taste like old water and ruin the flavour.

Variations

  • Spicy Tequini — For a spicier version, lightly press 2 thin slices of fresh jalapeño (with seeds) in the mixing glass before adding the other ingredients. The heat should remain subtle – not dominant.
  • Oloroso Tequini — Replace the Vermouth Dry with 1 cl dry Oloroso Sherry. This gives the drink a nutty depth and pairs perfectly with aged Reposado Tequila.
  • Tequini Spritz — For a lighter version, serve 4 cl Blanco Tequila, 1 cl Vermouth Dry, and 2 cl soda water over ice in a wine glass. Garnish with an orange slice.

Frequently Asked Questions

Can I use Reposado Tequila?

Yes, but the drink will then be softer and less peppery. Reposado Tequila has a slight vanilla note from aging in wooden barrels, which can overpower the Vermouth. If you use it, reduce the Vermouth to 0.75 cl to maintain balance.

Why isn’t the Tequini shaken?

Tequila is a clear spirit that can oxidize and become cloudy with too much movement. Shaking would also introduce too much air into the drink, causing the aromas to dissipate. Stirring gently cools the drink while preserving its clarity and freshness.

Can I leave out the Angostura?

Technically yes, but the dash of Angostura adds an important bitter component that ties together the Tequila and Vermouth. Without it, the Tequini tastes flat and one-dimensional. If you don’t have Angostura, try a dash of orange bitters instead.

Which glass is ideal?

A classic cocktail glass (Martini glass) works perfectly. It should have thin walls so the drink doesn’t warm up too quickly. If you don’t have one, a small wine glass will do – but never a tumbler, which is too large and too thick.
