Special Clam Cocktail – the Recipe Rezept

The Special Clam Cocktail is no drink for the faint of heart. Here, the salty bite of clam juice meets the dry spice of Sherry and the fruity sharpness of fruit brandy. The result is a cocktail that tastes of sea and bar – hearty, complex, and with a hint of umami. Perfect as an aperitif or an unusual digestif if you’re craving something beyond the usual fruit notes.

And this is what you need for the Special Clam Cocktail

2 cl fruit brandy (e.g., pear or apple brandy)

2 cl dry Sherry (Fino or Amontillado)

1 cl clam juice (fresh or from the jar, but unfiltered)

1 cl tomato juice (cold-pressed, not from concentrate)

3–4 dashes lemon juice (freshly squeezed)

2 dashes Worcestershire sauce (original, not the sweet version)

1 pinch sea salt (coarse)

1 pinch freshly ground black pepper

Garnish: 1 stalk celery (approx. 8 cm, with leaves)

This is what matters

The trick lies in the clam juice: use it unfiltered, otherwise the salty depth will be missing. If you use fresh clams, briefly cook them in some white wine and salt, strain the broth through a cloth, and let it cool. The juice should be clear but taste intense – like the sea in liquid form. The fruit brandy should not be too sweet; a dry apple brandy or a clear pear brandy provides the necessary fruitiness without cloying sweetness. And: don’t stir the cocktail too long, otherwise it will become watery – the clam juice will otherwise settle at the bottom and lose its spice.

Variations

  • Spicy Clam Cocktail — Replace the fruit brandy with 2 cl aged Rum and add 1 cl spicy chili tincture (e.g., from habaneros). Garnish with a thin slice of jalapeño.
  • Clam Martini — Double the amount of Sherry (4 cl) and omit the fruit brandy. Add 1 cl dry Vermouth and stir with ice until the drink is ice-cold. Garnish with an olive.

Frequently Asked Questions

Can I replace the clam juice with fish stock?

Fish stock is too mild and lacks the salty umami note of clam juice. If you can’t get clam juice, use 1 cl oyster sauce (diluted with 1 cl water) instead – it provides a similar depth, but the taste will be less maritime.

Why is the cocktail served without ice?

The Special Clam Cocktail thrives on the concentration of flavors. Ice would dilute it and weaken the salty, spicy notes. Serve it at room temperature so the flavors can fully develop.

Which Sherry works best?

Fino or Amontillado are ideal – dry, nutty, and with a slight saltiness. Avoid sweet Sherries like Cream or Pedro Ximénez; they overpower the hearty notes of the cocktail.
