Spanish coffee is not espresso with liqueur, but a warm, aromatic drink that warms you after a long evening or on cold days. The combination of coffee, brandy or dark rum, sweet cream, and cinnamon is reminiscent of an Irish Coffee, but is less sweet and has a spicy note. It is served in a preheated glass to prevent the coffee from cooling too quickly. The cream stays on top – you drink through the layer to slowly combine the flavors.
And this is what you need for Spanish Coffee
3 cl brandy or dark rum
12 cl hot filter coffee (freshly brewed, not from a thermos flask)
1 cl sugar syrup (1:1 sugar to water)
2 cl whipped cream (minimum 30 % fat, chilled but not stiff)
Cinnamon for dusting
This is what matters
The cream must be cold but not too stiff – it should spread easily over the coffee without disintegrating immediately. Tip: Just before serving, thin the cream with a splash of cold milk; it will pour more smoothly. For an extra aromatic touch, rub a cinnamon stick briefly over the rim of the glass before dusting with cinnamon to enhance the aroma. Important: The coffee should not boil, otherwise the alcohol will burn off and the cream will settle too quickly.
Variations
- Spanish Coffee with vanilla — add ½ tsp vanilla extract or a split vanilla pod to the hot coffee for a short time before adding the brandy or rum. Adds a sweet, floral note.
- Spanish Coffee with orange zest — express fresh orange zest over the glass before adding the cinnamon. Pairs especially well with brandy and rounds off the spice.
- Spanish Coffee with chocolate — mix 1 cl chocolate syrup or grated dark chocolate (minimum 70 %) into the sugar syrup. Creates a more robust, chocolatey variation.
Frequently Asked Questions
Can I use espresso instead of filter coffee?
Yes, but the espresso should not be too strong – otherwise it will overpower the brandy or rum. Use about 6 cl double espresso and reduce the coffee quantity accordingly. The drink will be more intense but less balanced.
Why does the cream need to be whipped?
Whipped cream forms a stable layer through which you drink the coffee. Unwhipped cream would immediately mix with the coffee and ruin the typical flavor. The cream should be cold so it holds better.
Can I leave out the sugar syrup?
Theoretically yes, but the syrup rounds off the coffee’s acidity and blends the flavors. Without it, the drink tastes harsher and less harmonious. If you prefer it less sweet, reduce the syrup to 0.5 cl.
Why is the glass preheated?
A cold glass would immediately cool the hot coffee and prevent the aromas from developing properly. Additionally, the glass could crack due to thermal shock. A preheated glass maintains the temperature longer and ensures a better drinking experience.
