Smoothie with banana, pineapple, mint, lemon & oat milk – the recipe Rezept

Alpro Drinks

This smoothie is the perfect start to the day or a refreshing snack in between. The combination of sweet banana, juicy pineapple and fresh mint harmonises perfectly with the creamy oat milk. A splash of lemon brings the necessary acidity to balance the sweetness. If you like, you can refine it with half a teaspoon of matcha powder – it not only gives a nice colour, but also a gentle energy kick without a caffeine shock.

And this is what you need for the smoothie with banana, pineapple, mint, lemon & oat milk

½ ripe pineapple (approx. 200 g flesh, fresh or frozen)

2 ripe bananas (approx. 200 g, the browner the peel, the sweeter the flavour)

4 fresh mint leaves (plus 1 leaf for garnishing)

Juice of ½ organic lemon (approx. 15 ml, only the clear juice, no peel)

250 ml oat milk (unsweetened, room temperature – cold milk makes the smoothie watery)

1 tsp agave syrup (optional, for extra sweetness)

½ tsp matcha powder (optional, for an earthy note)

This is what matters

The trick lies in the ripeness of the bananas: the browner the peel, the more fruit sugar and aroma they develop. If you don’t have time to let the bananas ripen, you can bake them for 10 minutes at 100 °C in the oven – this caramelises the starch and makes them sweeter. Important: only add the oat milk at the end and don’t blend for too long, otherwise the smoothie will become frothy instead of creamy. If you use matcha, mix it with 1 tbsp warm water beforehand to avoid lumps.

Variations

  • Green Power Smoothie — mix in a handful of baby spinach and ½ tsp matcha powder for an intense colour and a slightly earthy taste. The sweetness of the banana balances out the bitterness of the matcha.
  • Tropical Oat Smoothie with ginger — use 1 cm fresh ginger (peeled) and 50 ml coconut milk instead of oat milk. The ginger gives a light spiciness and the coconut milk makes it even creamier.
  • Protein smoothie — stir in 1 tbsp almond butter or 1 scoop of neutral protein powder – ideal after a workout. The oat milk provides enough liquid to maintain the consistency.

Frequently asked questions

Can I use frozen fruit?

Yes, frozen pineapple and bananas work even better because they make the smoothie cold and creamy without ice. Simply add the frozen fruit directly to the blender and use slightly less oat milk, as they release liquid as they thaw.

Why isn’t my smoothie creamy?

Too much liquid or blending for too short a time are the most common reasons. Start with 200 ml oat milk and add more if needed. Blend for at least 30 seconds on the highest setting – only then will the cell walls of the fruit break down and the mixture become smooth.

Can I prepare the smoothie in advance?

Yes, but don’t store it for longer than 4 hours in the fridge. The banana oxidises over time and the smoothie turns brown. If you prepare it in advance, only stir in the lemon juice shortly before serving to preserve the colour.

Does the smoothie taste good without mint?

Yes, the mint is optional. However, it gives a fresh note that balances the sweetness of the fruit. Alternatively, you can use 2–3 basil leaves or 1 tsp lemon balm.
