Red Berry Lemonade – the Recipe Rezept

This lemonade lives from the balance between sweet berries and the fresh acidity of limes. Not too sweet, not too sour – just right if you’re looking for something light with depth. The berries not only give colour but also a natural sweetness that reduces the need for sugar. A drink that tastes like summer but works all year round.

And this is what you need for the Red Berry Lemonade

250 g mixed red berries (strawberries, raspberries, redcurrants, blueberries)

4 limes (juice and a little zest)

60 g sugar (or 80 ml sugar syrup)

1 litre still water

Ice cubes as needed

1 pinch of salt (optional, for balancing the flavours)

Here’s what matters

The trick is in pressing the berries. Many crush them completely, but then the lemonade becomes cloudy and loses texture. It’s better to lightly press the berries so that they release their juice but remain identifiable as pieces. The salt in the lime juice is a pro tip: it rounds off the acidity without being noticeable. If you’re using sugar syrup, go for a thin one – it dissolves faster and distributes more evenly.

Variations

  • Red Berry Lemonade with Gin — For an adult version, add 4 cl London Dry Gin per serving. Stir the Gin in after pressing the berries so that the aromas don’t dissipate. Pairs especially well with a slice of cucumber or rosemary as garnish.
  • Sparkling Berry Lemonade — Replace still water with 500 ml still water and 500 ml sparkling water. Add the sparkling water just before serving so that the carbonation doesn’t dissipate. Ideal for those who prefer it fizzy.
  • Berry Lemonade with Ginger — Peel and finely grate a thumb-sized piece of ginger and press it with the berries. The ginger adds a slight spiciness that perfectly complements the sweetness of the berries. Strain through a sieve before serving to remove the ginger fibres.

Frequently Asked Questions

Can I use frozen berries?

Yes, frozen berries work just as well as fresh ones. They even release more juice as they thaw. Simply place them straight from the freezer into the jug and mix with the other ingredients. The drink will then be colder, but no less aromatic.

How long does the lemonade keep in the fridge?

The lemonade keeps in the fridge for about 2–3 days. However, the berries lose texture over time and become mushy. It’s best to prepare it fresh and drink it within 24 hours. If you have leftovers, strain the liquid through a sieve and store it without the berries.

Can I replace the sugar with honey or agave syrup?

Yes, honey or agave syrup are good alternatives. However, they have a different sweetness level: honey is more intense, agave syrup milder. Start with half the amount of sugar and taste as you go. Both ingredients dissolve better in warm water – if you use them, first mix them with a little warm water before adding to the jug.

Why is my lemonade cloudy?

If the lemonade is cloudy, it’s usually because the berries were crushed too much. The fruit pulp particles then dissolve in the water and make it opaque. Press the berries only lightly so that they release their juice but remain identifiable as pieces. If clarity is important to you, strain the lemonade through a fine sieve before serving.
