Port & Tonic – The Recipe Rezept

Basisspirituose
Longdrinks

Port & Tonic is proof that you don’t always need Gin to mix an elegant, dry long drink. The Port wine brings deep fruitiness and a slight sweetness that perfectly harmonises with the bitter freshness of the Tonic Water. Ideal for warm evenings or as an aperitif – simple but with character. Those who only know Port wine as a dessert wine will be surprised at how versatile it can be in the glass.

And here’s what you need for the Port & Tonic

6 cl dry white Port

12 cl Tonic Water (bitter, not too sweet)

1 thin slice of orange (as garnish)

1 splash of lemon juice (optional, for extra freshness)

What matters

The trick lies in the ratio: too much Tonic Water makes the drink watery, too little lets the Port dominate. Try different Tonic Waters – a bitter-spicy Tonic (e.g. with quinine) fits better than a sweet one. And: use *dry* white Port, not the sweet Ruby style. The white Port has more structure and less sugar, which makes the drink more balanced. A small splash of lemon juice (0.2 cl) before adding the Tonic Water enhances the fruit notes of the Port – but not too much, otherwise it becomes sour.

Variations

  • Port & Tonic with rosemary — Replace the orange slice with a fresh rosemary sprig. Lightly bruise the sprig before garnishing to release the essential oils. Perfect with a Port that has nutty notes.
  • Port & Tonic with grapefruit — Replace the Tonic Water with grapefruit tonic and garnish with a grapefruit slice. The bitter kick of the grapefruit underlines the dry notes of the Port.
  • Port & Tonic with ginger — Add 1 cl ginger syrup and garnish with a thin slice of ginger. The ginger gives the drink a spicy note that balances the sweetness of the Port.

Frequently Asked Questions

Can I also use red Port wine?

Yes, but Ruby Port is sweeter and fruitier – reduce the amount to 4 cl and use a particularly bitter-spicy Tonic Water to maintain the balance. Tawny Port (with nutty notes) also works but has a more intense flavour.

How long does opened Port wine keep?

White Port keeps for about 3–4 weeks in the fridge after opening, Ruby and Tawny a little longer (up to 2 months). Always seal the bottle tightly and store it cool. Port oxidises quickly – if it tastes like sherry or vinegar, it is no longer drinkable.

Can I make this drink without alcohol?

Yes, replace the Port with an alcohol-free Port substitute (e.g. grape juice with a little lemon juice and a pinch of salt) or a dry alcohol-free wine. The taste will be milder, but the principle remains the same.

Why does my Port & Tonic taste flat?

Probably the Tonic Water is too warm or the ice is too small. Use large ice cubes and cold Tonic Water straight from the fridge. Don’t stir too much – the carbonation should be retained. A splash of lemon juice can help to revive the flavours.
