Pitú Samba – the recipe Rezept

The Pitú Samba brings the vibrant aromatics of Brazil into the glass: cachaça as the base spirit meets fruity strawberry, nutty almond, and a fresh citrus note. The recipe balances sweetness and acidity so that every sip evokes a warm evening by the beach – without coming across as kitschy. Perfect for anyone who wants more than just a Caipirinha but still seeks that typically Brazilian lightness.

And this is what you need for the Pitú Samba

4 cl Cachaça

1.5 cl Triple Sec

2 cl fresh lime juice (squeeze it yourself, not from a bottle)

2 cl almond syrup (orgeat, not almond liqueur)

2 cl strawberry liqueur (preferably clear so the color doesn’t cloud)

This is what matters

The almond syrup (orgeat) is the secret to this drink – it must not be replaced with almond liqueur. Orgeat has a creamy, almost milky texture and a subtle bitterness that supports the strawberry liqueur without dominating it. If you don’t have orgeat on hand, you can make it yourself: stir 100 g almond paste with 100 ml hot water, add 50 g sugar, and strain through a fine sieve. The syrup keeps in the fridge for about a week. Important: always use fresh lime juice – the difference to bottled juice is like night and day, especially when it comes to balancing acidity.

Variations

  • Pitú Samba Tropical — Replace the strawberry liqueur with 2 cl passion fruit purée and add 1 cl coconut syrup. Garnish: half a passion fruit with pulp in the glass. Tastes like a Caribbean vacation without the drink becoming too sweet.
  • Pitú Samba Herbal — Add 2 fresh basil leaves and lightly crush them with the almond syrup in the shaker before adding the other ingredients. Garnish: a basil leaf on the rim of the glass. The herbal note makes the drink more mature without losing its freshness.

Frequently Asked Questions

Can I use white rum instead of cachaça?

Yes, but the character of the drink changes completely. Cachaça has a grassy, almost mineral note that rum lacks. If you use rum, choose a high-quality white rum with little inherent flavor – otherwise, it will overpower the other flavors. The drink will then taste fruitier but less complex.

Why does my Pitú Samba taste too sour?

You probably used too much lime juice or the almond syrup was too thin. Measure the juice precisely – 2 cl is optimal. If the drink is still too sour, add 0.5 cl more almond syrup and shake briefly again. The syrup should be thick, almost like honey, so it can bind the acidity.

Can I prepare the drink in advance?

Yes, but only the ingredients without ice and without garnish. The mixture keeps in the fridge for about 6 hours without the lime juice turning bitter. Shake and strain just before serving – otherwise, the drink loses its freshness and the flavors flatten.”
