The Mer du Sud – French for South Sea – is a classic Tiki cocktail that combines the tropical aromas of passion fruit with the sweetness of Falernum and the complexity of white and dark rum. Born in the golden era of Tiki culture, it embodies the longing for distant islands. The mix of tangy passion fruit, spicy Falernum, and a hint of Angostura makes it the perfect companion for warm evenings when you want to dream of the South Seas.

Here’s what you need for the Mer du Sud

3 cl white Rum

3 cl dark Rum (e.g., Jamaican Rum)

3 cl fresh lime juice

3 cl passion fruit juice (or maracuja syrup)

1.5 cl Falernum

2 dashes Angostura Bitters

What matters

The balance between white and dark rum is crucial. The white Rum provides the clear base, while the dark – ideally a funky Jamaican Rum – brings the necessary depth. When it comes to passion fruit juice, opinions differ: Fresh juice from real passion fruits is more intense and tangy, while ready-made nectar or syrup is sweeter. If you use syrup, reduce the Falernum by half a centilitre. The Falernum itself – a spiced lime syrup from the Caribbean – is not optional: It brings the typical Tiki notes of clove, ginger, and almond that complete the drink.

Variations

  • Mer du Sud Royal — Add 1.5 cl Cognac in addition to the Rum for more complexity and depth
  • Pacific Passion — Replace the dark Rum with Rhum Agricole and add 1 cl coconut syrup
  • Mer du Sud Swizzle — Build directly in the glass with crushed ice and stir with a swizzle stick instead of shaking

Frequently asked questions

Can I use ready-made passion fruit juice?

Yes, but make sure it’s not too sweet nectar. Rubicon or direct maracuja juice work well. If using sweetened juice, reduce the Falernum.

What is Falernum and where can I get it?

Falernum is a spiced syrup from the Caribbean with lime, almond, clove, and ginger. Brands like Velvet Falernum or John D. Taylor are available in well-stocked liquor stores or online.

Which dark Rum works best?

A Jamaican Rum like Appleton Estate or Smith & Cross brings the typical Tiki funk. Alternatively, a mild Barbados Rum like Mount Gay also works.

Does it have to be crushed ice?

Yes, for the authentic Tiki texture. Crushed ice cools faster and dilutes more evenly. If necessary, crush ice cubes in a towel with a muddler.
