Malibu Hot is not a substitute for mulled wine, but rather a deliberate contrast: sweet coconut meets fiery chili, rounded off with citrus and a pinch of salt. The drink is served hot but prepared cold – this prevents the rum from boiling off and the flavors from becoming flat. Perfect for cold evenings when you want something exotic without giving up alcohol. The heat comes as an aftertaste, like a little secret.

Here’s what you need for the Malibu Hot

4 cl Malibu Coconut Rum (Original, 21 % vol)

2 cl freshly squeezed lime juice

1 cl agave syrup

1 thin slice of fresh chili (red or green, remove seeds)

1 pinch of coarse sea salt

12 cl hot water (80 °C, not boiling)

Garnish: lime slice and chili ring

What matters

The temperature is crucial: Malibu has a low alcohol content (21 % vol), which quickly evaporates with too much heat. 80 °C is ideal – the water should steam but not bubble. If you prefer it spicier, leave the chili seeds in or rub the slice lightly on the inside of the glass before adding. A bartender’s trick: a pinch of salt in the glass suppresses the alcohol note and enhances the sweetness of the coconut. If you don’t have agave syrup, use simple sugar syrup – but only half as much, as agave is sweeter.

Variations

  • Malibu Hot Spiced — Pour 1 cinnamon stick and 2 cloves with the hot water, let steep for 2 minutes, then strain and proceed as in the original recipe. Perfect for Christmas markets.
  • Malibu Hot Iced — For warm days: shake all ingredients (except water) with ice in a shaker, strain into a highball glass, and top up with cold water. Garnish as in the original recipe but serve with ice cubes.
  • Malibu Hot Espresso — Instead of hot water, use 6 cl freshly brewed espresso. The bitterness of the coffee surprisingly harmonizes with the coconut. Optionally add 1 cl Kahlúa.

Frequently asked questions

Can I use another coconut rum instead of Malibu?

Yes, but pay attention to the alcohol content. Cheap coconut rums often have only 15 % vol and taste watery. If you use Bacardi Coconut or similar brands, reduce the water to 10 cl to maintain the balance.

Why can’t the water boil?

Boiling water destroys the rum’s aromas and causes the alcohol to evaporate. 80 °C is enough to serve the drink hot without burning the ingredients. A kitchen thermometer helps, but in a pinch: boil the water briefly and let it cool for 1 minute.

Can I prepare the drink in advance?

No. The chili only develops its heat after a few minutes and then becomes uncontrollable. Additionally, the rum loses aroma if left standing for too long. Always prepare fresh – it only takes 5 minutes.

What do I do if the drink is too spicy?

A splash of coconut milk (2 cl) or cream (1 cl) neutralizes the heat. Alternatively, simply add more agave syrup, but carefully – too much sweetness makes the drink sticky.

Zubereitung
