Lemonade with ginger beer – the recipe Rezept

Lemonade meets spicy ginger beer: a drink that starts sweet and ends with a spicy finish. The combination of fresh lemon juice and the heat of the ginger makes this drink a perfect thirst-quencher for hot days or an alcohol-free base for long drinks. It’s not just about mixing – the balance between acidity, sweetness, and spice determines the flavor.

And here’s what you need for the lemonade with ginger beer

250 ml freshly squeezed lemon juice (approx. 4–5 lemons)

150 g sugar (or 200 ml sugar syrup for better solubility)

1 litre ginger beer (spicy, not too sweet)

500 ml cold water (optional, for a lighter version)

Ice cubes to taste

Lemon slices and fresh ginger for garnish

What matters here

The trick is in the ginger beer: use a variety with a distinct spiciness, but no artificial sweetness. Cheap ginger beers often taste like sugar water with ginger flavor – that ruins the balance. If the beer is too sweet, add a splash of lemon juice until the spiciness comes through again. The lemonade should not be too sweet, otherwise it will taste flat. For a stronger flavor, grate some fresh ginger directly into the mixture – this gives an additional but finer spiciness than ginger slices.

Variations

  • Spicy ginger lemonade with mint — add 10 fresh mint leaves and 1 tsp freshly grated ginger to the pitcher before adding the ginger beer. The mint mellows the spiciness and gives a fresh note.
  • Alcoholic version with Gin — add 5 cl London Dry Gin per glass. The gin emphasizes the citrus notes and harmonizes with the ginger spiciness. Serve over ice and garnish with a lemon zest.
  • Light version with cucumber — add 3–4 thin cucumber slices to the pitcher and lightly press before adding the ginger beer. The cucumber gives a mild freshness and reduces the sweetness.

Frequently asked questions

Can I use bottled lemon juice instead of fresh?

Yes, but fresh juice tastes more intense and less sweet. If bottled juice is used, reduce the amount by 20–30 ml as it is often more concentrated. A splash of citric acid or a little more ginger beer can balance the flavor.

Why does the lemonade foam so much when I pour in the ginger beer?

This is due to the carbonation. Pour the ginger beer slowly down the side of the pitcher and gently stir with a spoon instead of shaking. This preserves the carbonation and prevents the lemonade from foaming over.

How long does the lemonade keep in the fridge?

For a maximum of 12 hours, as the carbonation escapes over time and the lemonade goes flat. It’s best to prepare it fresh and serve immediately. If it needs to stand longer, add the ginger beer just before serving.

Can I use honey or agave syrup instead of sugar?

Yes, but honey or agave syrup have a different sweetness level. Start with 100 g honey or 150 ml agave syrup and taste the mixture before adding more. Honey gives a floral note, agave syrup is more neutral.
