Kiss-Me-Quick – The Recipe Rezept

A drink that asks after the first sip: Where have you been my whole life? Pernod – an anise aperitif with a liquorice depth – is here brightened up with a hint of Angostura and Cointreau. The soda water brings fizz, but not too much: the drink should flatter, not dilute. Perfect for the transition from day to evening when the stomach is still empty and the mood is already shouting for after-work drinks.

And this is what you need for the Kiss-Me-Quick

4 cl Anise aperitif (e.g., Pernod)

2 dashes Angostura Bitters

1 tsp Cointreau (orange liqueur)

Soda water to top up

Ice cubes

This is what matters

The trick lies in the timing: add Angostura only after the Cointreau. The bitter substances adhere better to the surface when the liqueur is already mixed in. This creates a multi-layered flavour – first sweet, then bitter, then anise again. Those who prefer it even more intense can briefly rub the glass with a lemon zest before serving: the oils cut through the heaviness of the anise and make the drink airier.

Variations

  • Kiss-Me-Slow — Replace the anise aperitif with Ouzo and add 1 cl lemon juice. Shaken, not stirred – the lemon juice needs movement to blend in. Serve without ice in a chilled Nick & Nora glass for a more elegant variation.
  • Kiss-Me-Spicy — Add 2 slices of fresh ginger to the tumbler before adding the ice. The ginger softens the sweetness of the Cointreau and gives the drink a spicy note. Remove before serving or leave as a garnish.

Frequently Asked Questions

Can I use another anise aperitif instead of Pernod?

Yes, but the flavour changes. Pastis is stronger and earthier, Ouzo sweeter and lighter. Pernod has a balanced liquorice note that works well with Angostura. Try it out – but adjust the quantity: Ouzo needs less, Pastis more soda water.

Why does the drink taste different after the second sip?

Because the aromas rearrange themselves with every sip. The first sip is dominated by anise and Cointreau, the second by the bitterness of the Angostura, which slowly dissolves. This is not a flaw, but intentional – the drink is meant to evolve.

Can I make the drink without soda water?

Theoretically yes, but then it will be too heavy. Soda water not only brings fizz, but also a slight acidity that balances the anise aperitif. Without it, the drink becomes sticky and one-sided.
