Irish Mink – The Recipe Rezept

The Irish Mink is an underrated dessert in a glass: Irish Whiskey meets brown cocoa and cream, rounded off with a hint of orange. The combination of sweet, creamy and slightly spicy makes it the perfect finale – or an alluring digestif. Those who know the drink often order it twice: once to try, once to savour. The texture should be silky, not too heavy, with a subtle bitterness that carries the whiskey.

And this is what you need for the Irish Mink

4 cl Irish Whiskey

1 cl Curaçao Triple Sec

3 cl brown Crème de Cacao

6 cl cream (at least 30 % fat)

Cocoa powder for dusting

This is what matters

The trick lies in the cream: it should not be too cold, otherwise it will curdle when shaking. Room temperature (approx. 20 °C) is ideal so that it blends better with the other ingredients. If you prefer it extra creamy, you can lightly foam the cream with a milk frother beforehand – but only briefly, otherwise the drink will become too heavy. Add the cocoa powder only at the end: if it gets into the shaker too early, it will absorb moisture and form lumps. A hint of cinnamon or grated orange zest in the cocoa powder adds subtle depth without overpowering the flavour.

Variations

  • Dark Mink — Replace the Irish Whiskey with 4 cl Scotch Whisky (e.g. a light Speyside) and reduce the Crème de Cacao to 2 cl. Add 0.5 cl maple syrup to adjust the sweetness. The result is less creamy but smokier and more complex.
  • Irish Mink Flip — Add a whole egg yolk and shake the drink without ice first (dry shake) before shaking it with ice again. The egg yolk gives the drink an even silkier texture and a slightly yellowish colour. Make sure the egg is fresh – ideally straight from the fridge.

Frequently asked questions

Can I replace the cream with milk?

No. Milk has too little fat to achieve the creamy texture. If necessary, you can stretch the cream with a little whole milk (e.g. 4 cl cream + 2 cl milk), but the drink will lose body and flavour depth.

Why does the cream sometimes curdle?

This happens if the cream is too cold or the shaker is too full of ice. Use cream at room temperature and shake vigorously, but not for too long. If it does happen, simply strain through a fine sieve – the lumps will remain behind.

Can I make the drink without alcohol?

Yes, but the flavour changes significantly. Replace the whiskey with 4 cl alcohol-free whiskey substitute (e.g. from oak extract) and the Curaçao with 1 cl non-alcoholic orange liqueur. The Crème de Cacao remains, as there are hardly any alcohol-free alternatives.
