Pomegranate-Rosemary Lemonade – the Recipe Rezept

Pomegranate and rosemary are an unusual yet perfect pairing: the sweet-sour fruit meets the resinous spice of rosemary. This lemonade is no classic cocktail, but a refreshing long drink that shines through the combination of sparkling water and fresh herbs. Ideal for hot days or as an alcohol-free base for creative Spritz variations. The rosemary is not just used as a garnish, but its aroma unfolds directly in the drink – a detail that makes all the difference.

Here’s what you need for the Pomegranate-Rosemary Lemonade

Juice from 4 pomegranates (approx. 200 ml)

2 sprigs fresh rosemary (approx. 10 g)

Juice from 2 lemons (approx. 60 ml)

4 tbsp honey (approx. 60 ml, liquid)

1 litre sparkling water (chilled)

Ice cubes or crushed ice for serving

Optional: 1 splash lemon zest for extra freshness

This is what matters

The rosemary should not only serve as a garnish, but should actively steep in the drink. It’s important not to chop it too finely – larger pieces release their aroma more slowly and are easier to filter out later. Those who prefer a more intense flavor can lightly rub the rosemary needles between their fingers before chopping to release the essential oils. Another trick: gently warm the honey so it dissolves more quickly in the cold juice. If you don’t have liquid honey, you can dissolve it in some warm water before adding it to the jug.

Variations

  • Pomegranate-Rosemary Spritz — For an alcoholic version, add 4 cl London Dry Gin or white Rum to the jug before adding the sparkling water. The gin emphasizes the herbal note of the rosemary, while the rum highlights the fruitiness of the pomegranate.
  • Pomegranate-Mint Lemonade — Replace rosemary with fresh mint – roughly tear about 10 leaves and use them as in the original recipe. The mint gives the drink a fresher, lighter note that is especially appealing on hot days.
  • Pomegranate-Rosemary Iced Tea — Instead of sparkling water, use 1 litre of cold hibiscus or green tea. The tea enhances the tart component and gives the drink a deeper color. Adjust honey to taste, as tea often tastes more bitter than water.

Frequently Asked Questions

Can I replace the pomegranate juice with store-bought juice?

Yes, but fresh-pressed juice tastes more intense and less sweet. Store-bought pomegranate juice is often enriched with sugar – in that case, reduce or omit the honey. Make sure the juice contains no additives like preservatives or flavors.

How long does the lemonade keep in the refrigerator?

Without alcohol, it keeps for about 2–3 days, though the carbonation will diminish over time. Best to prepare fresh and enjoy within 24 hours. With alcohol (e.g. gin or rum), the shelf life extends to up to 5 days.

Can I substitute dried rosemary for fresh?

Fresh rosemary is far more aromatic, but in a pinch, dried rosemary can be used – however, only one-third of the amount. Dried rosemary releases its aroma more quickly, so let the drink steep for 2–3 minutes and then strain it out.

Why does the drink sometimes taste bitter?

This can happen if the rosemary steeps for too long or if the stems are used. The stems contain more bitter compounds than the needles. For a milder taste, remove the rosemary after 3–4 minutes of steeping. Alternatively, slightly increase the amount of honey.
