Mulled Wine with Rum – the Recipe Rezept

Basisspirituose
Alpro Drinks

A classic mulled wine gets a smoky-spiced note from dark Rum, perfectly complementing cinnamon, cloves, and orange peel. This drink not only warms you up but also unfolds a complex aroma when gently steeped. Ideal for cold evenings when you want something more than just mulled wine. The Rum rounds off the sweetness and gives the whole drink a slightly oily texture that feels pleasant in the mouth.

And here’s what you’ll need for the mulled wine with Rum

750 ml dry red wine (e.g., Dornfelder or Spätburgunder)

100 ml dark Rum (at least 40% vol.)

75 g brown sugar

3 cinnamon sticks

4 whole cloves

Peel of 1 organic orange (only the outer layer, no pith)

1 star anise (optional, for added depth)

What matters most

The trick is in the timing: the Rum is added only after the first 10 minutes so it doesn’t reduce too much and lose its aroma. Dark Rum with subtle molasses or vanilla notes works best—it gives the mulled wine a smoky depth without overpowering the spices. For a more intense flavor, you can gently heat the Rum in a spoon over a flame before adding it. This lightly caramelizes the alcohol and enhances the aroma. Important: only grate a thin layer of orange peel, otherwise the drink will become bitter.

Variations

  • Mulled wine with white Rum — Replace the dark Rum with white Rum for a fresher, less smoky version. Pairs well with lemon peel instead of orange and slightly less sugar.
  • Mulled wine with spiced Rum — Use a pre-spiced Rum (e.g., with vanilla or cinnamon) and reduce the cinnamon sticks to one. This makes the drink even more harmonious.
  • Alcohol-free version — Replace the Rum with 50 ml alcohol-free Rum-flavored syrup and add 1 tsp of vanilla extract. The syrup provides the typical Rum note without alcohol.

Frequently asked questions

Can I serve the mulled wine with Rum cold?

No, the drink relies on warmth to release the aromas. Served cold, the spices taste harsh and the Rum comes across as too dominant. If you have leftovers, gently reheat them.

Why shouldn’t the mulled wine boil?

Boiling causes the alcohol to evaporate too quickly, and the spices can turn bitter. The ideal temperature is 70–80 °C—this preserves all the aromas.

Can I use white wine instead of red?

Theoretically yes, but the flavor will be significantly lighter and less spiced. Red wine gives the drink the necessary body and pairs better with Rum and spices.
