Beverage Studies – What is Direct Juice? – What is That?

Freshly squeezed juice is fruit juice that, after pressing, is only filtered and preserved – without the detour through concentrate. In the bar, it makes the difference between a flat and an aromatically clear drink. The price is higher, but so is the quality in the glass.

What distinguishes freshly squeezed juice from other juices

Freshly squeezed juice is pressed from fruit, filtered and pasteurized. That’s it. No water removal, no reconstitution, no added aromas. The counterpart is juice from concentrate: the fruit is pressed, the water is removed under vacuum, the concentrate is transported and later refilled with water. Technically, both are fruit juice under German law, but in terms of taste, there’s a world of difference.

Freshly squeezed juice tastes like the fruit it comes from. It has more body, clearer aromas and a natural texture. Juice from concentrate often tastes flatter, sweeter and more uniform – regardless of the brand. The reason: when concentrating, volatile aromatic substances are lost, which cannot be fully restored even by reconstitution. In the bar, you notice the difference immediately when you compare a Margarita made with freshly squeezed lime juice to one made with concentrate lime juice.

How to recognize freshly squeezed juice

On the bottle, it either explicitly states freshly squeezed juice or you read the ingredient list: if it only lists the fruit, it’s freshly squeezed juice. If it lists fruit juice from fruit juice concentrate or water, it’s from concentrate. Some manufacturers also write 100 percent freshly squeezed juice or not from concentrate on the front – a selling point because it’s more expensive to produce.

Visually, freshly squeezed juice is often cloudier because it contains more fruit pulp and suspended solids. This is especially true for orange juice or apple juice. For clear juices like grape or apple, there is also freshly squeezed juice that has been filtered and is crystal clear. Cloudiness alone is therefore not a reliable indicator; the ingredient list is more trustworthy.

In the bar

Freshly squeezed juice is standard in bars that prioritize quality. You press citrus fresh anyway, but for everything else – pineapple, grapefruit, cranberry, tomato – you reach for the bottle. Freshly squeezed juice brings more aroma, better balance and a smooth mouthfeel. It costs more, but you also need less syrup or liqueur to balance the drink because the fruit itself already brings depth.

Freshly squeezed juice has a shorter shelf life after opening. Without concentrate-based preservation, it spoils faster, usually after three to five days in the refrigerator. This is not a disadvantage, but a sign that you are working with a real food product. You just need to keep an eye on your stock and buy smaller bottles if turnover isn’t high enough.

For classics like the Zombie, the Sea Breeze or the Bloody Mary, freshly squeezed juice makes the difference between okay and great. Guests can taste it, even if they don’t know why the drink is better. Some bars list freshly squeezed juice on the menu to communicate quality – which is legitimate as long as it’s true.

Common misconceptions

Freshly squeezed juice is not automatically organic or unsprayed. It can be conventionally produced with fruit from industrial farming. Freshly squeezed juice only says something about the processing, not the origin or cultivation.

Freshly squeezed juice is also pasteurized. Without heating, it wouldn’t be shelf-stable. Some guests think freshly squeezed juice is raw or cold-pressed – that’s only true for a few, very expensive products that are then kept in the refrigerated section and have a shelf life of only a few days.

Freshly squeezed juice is not always cloudy. There is clear freshly squeezed juice that has been filtered multiple times. Conversely, there is cloudy juice from concentrate to which fruit pulp has been added later. Clarity does not indicate the production method; only the ingredient list counts.

Frequently asked questions

Is freshly squeezed juice healthier than juice from concentrate?

Nutritionally, there are hardly any differences. Both contain similar amounts of sugar, vitamins and calories. The advantage of freshly squeezed juice lies in the taste and aroma quality, not in health benefits.

Can I make freshly squeezed juice myself?

Yes, by pressing fruit, filtering the juice and using or pasteurizing it immediately. This is freshly squeezed juice in the strictest sense. Freshly pressed juice is the most direct form, but without preservation, it’s only usable for a few hours.

Why is freshly squeezed juice more expensive?

Because it’s heavier and requires more storage space. Concentrate can be transported compactly and later reconstituted with local water. Freshly squeezed juice must be shipped as a finished product, which costs more in logistics and energy.

Is there freshly squeezed juice for exotic fruits?

Yes, but less commonly. Pineapple, mango, passion fruit and guava are available as freshly squeezed juice, often in smaller bottles or from specialized suppliers. The price is significantly higher than concentrate-based alternatives.
