Fino Sherry – What is it?
Fino Sherry is a special variety of Spanish Sherry, a fortified wine from the region around Jerez de la Frontera in Andalusia. Fino is a pale, dry Sherry that is protected by the so-called Flor (a natural yeast) that forms on the surface of the wine during maturation. This Flor prevents the Sherry from coming into contact with oxygen and gives it its characteristic style.
Fino Sherry has a clear and lively flavour with notes of almonds, salty hints and a slight yeastiness. It is usually served chilled and pairs well with tapas, seafood and other light dishes. Fino Sherry is also enjoyed as an aperitif and can be a refreshing alternative to other dry wines.
