Dark’n’Stormy – The Recipe Rezept

A drink that tastes of sea and storm: dark rum meets fiery ginger beer, brightened by lime juice. The Dark ´n´ Stormy is no cocktail for the faint-hearted – it bites back but remains refreshing. The combination of sweet rum and sharp ginger makes it the perfect companion for sultry evenings or as a contrast to hearty dishes. Anyone mixing it for the first time should not skimp on the ingredients: the ginger must be noticeable, otherwise the character is lost.

And here’s what you need for the Dark ´n´ Stormy

5 cl dark rum

2 cl fresh lime juice

12 cl ginger beer (fiery, not sweet)

1 dash Angostura bitters (optional, for depth)

This is what matters

The trick lies in the ginger beer: it must be spicy enough to hold its own against the rum but not so sweet that it overpowers the drink. Many bartenders taste the beer straight first – if it doesn’t tickle the throat, it’s too mild. Another little trick is layering: the rum should form a dark layer above the ice before the ginger beer is added. This not only gives the drink visual depth but also ensures that the first sip delivers the full contrast of rum and ginger. For an even more intense experience, rub a lime peel over the drink before serving – the oils enhance the freshness.

Variations

  • Stormy Colada — Shake 5 cl dark rum with 3 cl coconut cream and 2 cl lime juice, strain over crushed ice and top up with 8 cl ginger beer. Garnish: lime wheel and toasted coconut flakes. Tastes like a Dark ´n´ Stormy on a Bahamian vacation.
  • Spiced Dark ´n´ Stormy — Toast the rum briefly with a pinch of ground cinnamon and a knife-tip of chili powder (in a small pan over low heat until the alcohol evaporates). Let cool and use as per the original recipe. The drink gains a smoky-spicy note that’s perfect for autumn evenings.

Frequently asked questions

Can I use white rum?

Theoretically yes, but the drink loses its characteristic taste. Dark rum brings notes of caramel and molasses that complement the ginger. White rum, on the other hand, is too neutral – the Dark ´n´ Stormy then tastes like a simple highball.

Why doesn’t the rum layer properly?

Either the glass isn’t cold enough or the ice is too large. Use small ice cubes and chill the glass with ice water beforehand. When pouring the rum, a bar spoon helps: hold it upside down just above the ice surface and pour slowly. This distributes the rum evenly.

Which ginger beer is the best?

One that’s spicy and not too sweet. Many commercial ginger beers are laden with sugar – try a small amount straight before buying. A good ginger beer should have a slight burn on the finish. If you can’t find one, you can make your own: mix 1 liter ginger ale with 2 cl ginger syrup and 1 cl lime juice.
