The Cranberry-Thyme Spritzer combines tart cranberry with the spicy freshness of thyme into a light, alcohol-free drink. The herb lends the juice a Mediterranean note without dominating it. I muddle the thyme directly in the glass so that the essential oils blend with the juice. Topped up with soda water, this becomes a spritzer that tastes of summer but also works in winter.

And here’s what you need for the Cranberry-Thyme Spritzer

3 sprigs of fresh thyme

10 cl cranberry juice

2 cl lemon juice

1 cl agave syrup

8 cl soda water

Key points

When muddling the thyme, the goal is to press the leaves without crushing the stems. Too much pressure makes the drink bitter, as the woody parts release tannins. I hold the muddler loosely and press down gently two or three times. The thyme should release its aroma, not fall apart. Cranberry juice from the refrigerated section is often diluted with apple or grape juice, which makes it milder. Pure cranberry nectar is more tart and needs a bit more sweetness. You can replace the agave syrup with honey syrup, which will give the drink a rounder finish.

Variations

  • Cranberry-Thyme Gin Spritzer — add 4 cl London Dry Gin before the soda water to turn the spritzer into a long drink with a juniper-herb profile.
  • Cranberry-Rosemary Spritzer — use rosemary instead of thyme for a more intense, resinous note.

Frequently Asked Questions

Can I use dried thyme?

No, dried thyme does not release essential oils and tastes dusty. Fresh thyme is essential here.

Which soda water works best?

A neutral soda water with medium carbonation. Highly mineralized water can clash with the cranberry juice.

How sweet should the spritzer be?

The agave syrup balances the acidity without making the drink sweet. Taste after stirring and add half a centilitre if needed.
