Caipiroshka & Caipirinha – the recipe Rezept

The Caipirinha is Brazil’s national drink: cachaça, lime and raw sugar – that’s all it takes. The Caipiroshka replaces the cachaça with vodka, making it a little milder, but no less aromatic. Both drinks thrive on the freshness of the lime and the right balance between sweetness and acidity. Here’s how to prepare them perfectly – with a trick that makes the difference between good and great.

Here’s what you need for the Caipiroshka & Caipirinha

1 lime (divided into 6 wedges, seeds removed)

3 teaspoons fine raw sugar (or 2 cl sugar syrup)

4 cl vodka (for Caipiroshka) or cachaça (for Caipirinha)

finely crushed ice or ice cubes (approx. 100 g)

This is what matters

The crucial moment is crushing the lime. Many press too hard and extract bitter compounds from the peel. Better: Apply only enough pressure to release the juice, without tearing the peel. Another trick: Use raw sugar instead of regular sugar – it dissolves faster and gives the drink a lightly caramelised note. If you prefer it extra fresh, you can briefly soak the lime in cold water beforehand to remove dust and residues.

Variations

  • Caipifruta — Replace the lime with other fruits like strawberries, passion fruit or pineapple. The fruit is crushed just like the lime, but use a little more sugar since many fruits have less acidity. Particularly delicious with fresh mango and a pinch of chilli for a spicy kick.
  • Caipirissima — Instead of cachaça or vodka, use white rum. The rum gives the drink a lightly sweet, tropical note. Ideal for anyone who likes rum but can’t stand the intense flavour of cachaça.

Frequently asked questions

Can I use regular sugar instead of raw sugar?

Yes, but raw sugar dissolves faster and adds a lightly caramelised sweetness. If you use regular sugar, opt for fine crystal sugar and stir a little longer until it has completely dissolved.

Why are the limes cut into wedges and not into pieces?

Wedges are easier to crush without damaging the peel too much. This keeps the drink aromatic but not bitter. If you prefer an even gentler approach, you can lightly score the lime with a knife before crushing it.

Can I prepare the drink in advance?

No, both versions should be freshly made. The lime oxidises quickly, and the ice dilutes the drink over time. It’s best to have all the ingredients ready and mix them just before serving.
