Bramble Classic – The Recipe Rezept

Basisspirituose
Alpro Drinks

The Bramble is a modern classic that combines gin with the fruity acidity of blackberries. It dates back to the 1980s, but its charm lies in its simplicity: fresh lemon, gin, and a touch of sweetness, topped with blackberry liqueur that drapes over the crushed ice like a dark veil. Perfect for warm evenings when you need something both bitter and refreshing. Here’s the version that works in every bar – no frills, but with the right bite.

And this is what you need for the Bramble Classic

5 cl London Dry Gin

2 cl freshly pressed lemon juice

1 cl sugar syrup (1:1)

2 cl blackberry liqueur

2 fresh blackberries (plus 1 for garnish)

1 slice organic lemon (for garnish)

crushed ice (approx. 200 ml)

What matters most

The trick lies in the crushed ice: it needs to be cold enough to chill the drink immediately, but not so fine that it dilutes the blackberry liqueur right away. If you don’t have crushed ice on hand, use large ice cubes and break them up in the shaker with a few firm shakes – but not too hard, otherwise the drink will become watery. And: the blackberry liqueur should always be added *after* the ice, otherwise it will mix too much with the gin and lose its dramatic appearance. If you like, you can briefly warm the liqueur in the freezer beforehand – it will then flow more slowly and distribute more evenly.

Variations

  • Bramble with raspberry — Replace the blackberry liqueur with raspberry liqueur and the blackberries with fresh raspberries. The drink becomes slightly sweeter and less bitter, but just as refreshing.
  • Bramble with thyme — Add 2 fresh thyme sprigs: one for stirring in the tumbler, one as garnish. The thyme enhances the bitter notes of the gin and gives the drink an aromatic depth.
  • Bramble without liqueur — For a lighter version: replace the blackberry liqueur with 1 cl additional sugar syrup and blend 4 fresh blackberries with the gin. The drink becomes fruitier, but less complex.

Frequently asked questions

Can I also shake the Bramble?

No. The Bramble is *built*, not shaken – the crushed ice and the layering of the liqueur are essential for texture and appearance. If you shake it, everything mixes together, and the drink loses its characteristic look.

Which gin works best?

A classic London Dry Gin with distinct juniper and citrus notes. Overly floral or spicy gins will overpower the blackberry. If you choose a gin with a light peppery note, it harmonizes especially well with the lemon’s acidity.

How long does the lemon juice keep?

Freshly pressed lemon juice oxidizes quickly and loses its aroma after 2–3 hours. Squeeze it fresh just before mixing – or only use bottled lemon juice in an emergency, but then you’ll taste the difference.

Can I use frozen blackberries?

Yes, but they release more liquid and can water down the drink. Pat them dry beforehand and use them only for garnish, not for preparation. Fresh blackberries are always the better choice.
