Blonde Sangria – the Recipe Rezept

Blonde Sangria is the summery answer to classic red sangria – fewer tannins, more honey and a light, inviting color. Here, white wine is sweetened not with sugar but with liquid acacia or almond blossom honey, which adds a delicate floral note. The citrus fruits are not just used as a garnish but as an integral flavor carrier: their juice and the essential oils from the peel combine with the wine to create a refreshing, lightly sippable mix. Perfect for garden parties, but also as an aperitif without heavy fruit pieces.

And this is what you’ll need for Blonde Sangria

8 cl clear acacia or almond blossom honey

2 lemons (juice and peel)

2 oranges (juice and peel)

2–2.5 liters dry white wine (e.g., Verdejo or Pinot Grigio)

Ice cubes

10–12 cl soda water (per serving)

What matters

The trick lies in the honey: it should not be heated too strongly, otherwise it loses its floral note. A temperature of about 40 °C is ideal – just warm enough to make it liquid. The citrus peel is not only used as decoration but releases essential oils when stirred, which aromatize the wine. For an extra elegant touch, you can remove the peel strips before serving once they have released their aroma. Important: the wine should not be too acidic – a neutral, dry white wine such as Verdejo or Pinot Grigio harmonizes best with the honey.

Variations

  • Blonde Sangria with peach — cut 2 ripe peaches into small cubes and add to the sangria 15 minutes before serving. The fruit adds a gentle sweetness and a slightly creamy texture. Pairs particularly well with a light Moscato or Viognier.
  • Blonde Sangria with rosé — replace the white wine with a dry rosé. The color becomes more intense, and the berry notes of the rosé complement the citrus flavors. Ideal for warm evenings when something fruitier may be desired.
  • Blonde Sangria with herbs — add 3–4 fresh basil leaves or a few sprigs of thyme to the sangria and let steep for 20 minutes. The herbs bring a subtle spice that enhances the honey and citrus aromas. Remove the herbs before serving.

Frequently asked questions

Can I replace the honey with sugar?

Yes, but the flavor changes. Honey adds a floral note and a softer sweetness, while sugar tastes more neutral. If you use sugar, take 6 cl sugar syrup (1:1 sugar-water) instead of 8 cl honey.

How long does Blonde Sangria keep in the fridge?

The sangria is best fresh, but it keeps in the fridge for up to 24 hours. After that, the citrus notes lose their freshness, and the wine can oxidize. Add soda water just before serving.

Which wine works best?

A dry, not too acidic white wine such as Verdejo, Pinot Grigio, or a light Chardonnay works best. Too fruity wines (e.g., Riesling) can clash with the honey. Avoid very cheap wines – they often taste flat after mixing.

Can I make the sangria without alcohol?

Yes, replace the wine with 2 liters of alcohol-free white wine or a mix of grape juice and apple juice. The proportions remain the same, but the flavors may seem slightly less complex.
