Bleu Bleu Bleu – the recipe Rezept

The Bleu Bleu Bleu is no cocktail for the faint-hearted: four base spirits – London Dry Gin, Vodka, Blanco Tequila and Blue Curaçao – meet lemon juice and egg white. The drink is dry shaken, then topped with soda water and garnished with a lemon slice. The result is a zesty, creamy and visually striking drink that, despite its strength, tastes surprisingly balanced. Ideal for anyone who wants colour and kick in one glass.

And this is what you need for the Bleu Bleu Bleu

2 cl London Dry Gin

2 cl Vodka

2 cl Blanco Tequila

2 cl Blue Curaçao

2 cl lemon juice

1 egg white (fresh, approx. 30 ml)

6 cl soda water (to top up)

1 slice of lemon (for garnish)

This is what matters

The egg white is the key: dry shaking is a must, otherwise it will curdle. If you don’t want to use fresh eggs, you can use pasteurised liquid egg white – but only the type without additives. It’s important that the shaker is clean and grease-free, otherwise the egg white won’t bind properly. When topping up with soda water, don’t make it too fizzy, otherwise the drink will lose its creamy texture. The Bleu Bleu Bleu is no drink for the faint-hearted – the combination of four spirits and the egg white foam makes it heavier than it looks.

Variations

  • Bleu Bleu Rouge — Replace the Blanco Tequila with 2 cl raspberry syrup. The drink becomes fruitier and less tart, but retains its blue colour. Garnish: fresh raspberries.
  • Bleu Bleu Sec — Omit the soda water and serve the drink as a short drink in a cocktail glass. The flavour becomes more intense and drier, while the colour remains bright blue. Garnish: lemon zest.

Frequently Asked Questions

Can I make the Bleu Bleu Bleu without egg white?

Yes, but the drink will lose its creamy texture and appear thinner. The egg white binds the aromas and makes the drink smoother. If you don’t want to use egg white, you can add 1 cl of cream or coconut milk – the result is less elegant, but still drinkable.

Why does the egg white sometimes curdle?

This happens when the shaker isn’t clean or the egg white isn’t shaken dry enough. Grease or residue in the shaker disrupts the emulsion. Clean the shaker thoroughly with hot water and washing-up liquid before use, and always shake the egg white first without ice.

Can I pre-mix the drink?

No. The egg white settles over time, and the soda water loses its fizz. The Bleu Bleu Bleu should always be prepared fresh. The spirits and lemon juice can be prepared and chilled in advance – the egg white and soda water are only added at the very end.
