Bartender – the recipe Rezept

The Bartender is an elegant, dry aperitif that shines through the combination of five clear spirits and a hint of fruit. Originally intended as a quick mix for stressed bartenders, it now impresses with its balanced complexity: herbaceous from the sherry, spicy from the gin, slightly bitter from the vermouth, and with an exotic sweetness from the Grand Marnier. The mango or pineapple slice is not just a garnish, but provides a fresh contrast with the first sip—perfect for kicking off the evening.

And here’s what you need for the Bartender

0.5 cl dry vermouth (Vermouth Dry)

0.5 cl Dubonnet (red aromatised wine)

0.5 cl sherry (amontillado or fino)

0.5 cl London Dry Gin

1 splash Grand Marnier (orange liqueur)

Ice cubes

1 slice of mango or pineapple (fresh, approx. 0.5 cm thick)

Key points

The Grand Marnier is the secret star: just one splash (approx. 0.2 cl) is enough to harmonise the five dry components. Too much makes the drink cloying—too little leaves it harsh. Tip: Add the liqueur only after measuring the other ingredients, so the dosage remains precise. If you don’t have Grand Marnier, Cointreau can be used instead, though the subtle vanilla note will be missing. Important: Always add the spirits in the specified order to the ice—this way they chill evenly and blend better.

Variations

  • Bartender Royal — Replace the Grand Marnier with 0.5 cl dry champagne and carefully float it on top after straining. The effervescence lifts the aromas and makes the cocktail lighter.
  • Bartender Tropical — Add 1 cl mango syrup and replace the mango/pineapple slice with a cocktail cherry. The syrup enhances the fruity note without losing the dryness.

Frequently asked questions

Can I leave out the Dubonnet?

Dubonnet gives the drink its characteristic herbal note and a touch of sweetness. Without it, the cocktail tastes harsher and less complex. If necessary, replace it with 0.5 cl red vermouth plus a splash of sugar syrup.

Why isn’t the drink stirred?

The five spirits are all clear and light—they only combine properly through vigorous shaking. Stirring would not blend the flavours sufficiently and would make the drink too watery.

Can I use frozen fruit for the garnish?

No. Frozen fruit releases too much water and dilutes the drink. Fresh slices are essential—they only release juice when you drink, ensuring the right contrast.
