Bamboo – the recipe Rezept

The Bamboo is a quiet giant among aperitif cocktails: two equally strong pillars of Fino sherry and dry vermouth unite in the mixing glass. A splash of orange bitters gives the drink the necessary spice without disturbing its clear line. It is served ice-cold, but without ice—the chill comes solely from the pre-chilled glass. Perfect for the moment when you don’t want to eat yet but must drink.

And this is what you need for the Bamboo

3 cl Fino sherry

3 cl dry vermouth (Vermouth Dry)

1 splash orange bitters (approx. 0.1 cl)

What matters most

The Bamboo thrives on the balance between sherry and vermouth—but the decisive trick lies in the ice. Use large, clear cubes that melt slowly, and do not stir for too long. The mixture should be so cold that it almost hurts, but not yet watery. The orange bitters are added last: a single splash is enough to anchor the flavors without overpowering them. If you don’t have bitters on hand, you can instead express a thin slice of dried orange peel over the glass—the effect is more subtle, but just as effective.

Variations

  • Adonis — Replace the Fino sherry with 3 cl sweet vermouth (Vermouth Rosso) and add 1 splash Angostura bitters. The result is softer but with more body—ideal for those who find the Bamboo too dry.
  • Bamboo with sherry finish — Instead of Fino sherry, use a matured Amontillado sherry. The nutty, oxidative character of the Amontillado gives the drink a smoky depth that is particularly convincing in autumn.

Frequently asked questions

Can I serve the Bamboo with ice?

No. The Bamboo is a pure aperitif cocktail whose elegance comes from its ice-cold temperature without dilution. Serve it in a pre-chilled glass—anything else would be a compromise.

Which vermouth works best?

A high-quality, dry vermouth with a distinct herbal note is ideal. Avoid cheap no-name products—they make the drink flat. A good Vermouth Dry should taste of wormwood, citrus, and a slight bitterness.

Why is the cocktail called Bamboo?

The name refers to the slender, upright form of the cocktail—similar to a bamboo stalk. A poetic association, but not a historical one.
