Azzurro Notte – alcohol-free – the recipe Rezept

Basisspirituose
Alkoholfreie Cocktails (Mocktails)

A blue sky fading into the night – this drink captures the mood without any alcohol. Almond syrup adds depth, Blue Curaçao syrup the color, and tonic water brings the fizz that tickles the palate. Perfect for anyone wanting a hint of vacation in a glass but skipping the spirits. The lemon slice on the rim isn’t just for show: it’s meant to be drunk once half the drink is gone, giving a fresh burst of flavor.

Here’s what you need for the Azzurro Notte – alcohol-free

2 cl almond syrup (1:1 sugar-almond mix, not too thin)

2 cl alcohol-free Blue Curaçao syrup (at least 60% fruit content)

3 cl freshly squeezed lemon juice (no pre-made juice – the acidity must be sharp)

12 cl tonic water (bitter, not too sweet, e.g. containing quinine)

Garnish: 1 thin lemon slice (with peel, cut crosswise, 3 mm thick)

Garnish: 1 cocktail cherry (juicy, not candied)

Key points

The trick is in the timing: only add the tonic water at the very last moment, or it’ll lose its fizz. And don’t treat the lemon slice as mere decoration – it’s meant to go into the glass once half the drink is gone. The peel then releases a slight bitterness that balances the almond flavor. For an even more intense taste, rub a little lemon zest over the drink before serving (but don’t let it fall into the glass – just the aroma!).

Variations

  • Azzurro Notte Spritz — For a lighter version, use 6 cl alcohol-free Prosecco instead of tonic water. The lemon juice’s acidity then harmonizes better with the bubbles – the drink becomes less sweet but more effervescent. Garnish: orange slice instead of lemon.
  • Azzurro Notte Herbal — Stir in 1 cl rosemary syrup (homemade or store-bought) with the almond-Blue-Curaçao mix. Works especially well with tonic water that has a herbal note. Garnish: rosemary sprig instead of lemon slice.

Frequently asked questions

Can I replace the Blue Curaçao syrup with something else?

Yes, but the color and flavor will change. For a green variation, use 2 cl melon or kiwi syrup. For red, 2 cl raspberry syrup. The almond flavor remains dominant, but the fruit note becomes stronger.

Can I prepare the drink in advance?

No, it’s best not to. Tonic water loses its carbonation after 10–15 minutes, and the lemon juice oxidizes. Mix everything just before serving – it only takes 4 minutes.
