Angelic – the recipe Rezept

The Angelic is a short, creamy drink that gains a velvety texture from the egg white. The combination of fruity juices, Vodka, and herbal liqueur creates a surprisingly harmonious first sip – sweet but not cloying, with a subtle spice on the finish. Perfect for guests who enjoy fruity drinks but don’t want a pure sugar solution. The herbal note gives the drink depth without being overpowering.

And this is what you need for the Angelic

1 cl herbal liqueur (e.g., anise or vanilla-based)

1 cl Bourbon Whiskey

2 cl Vodka

1 egg white (fresh, approx. 30 ml)

2 cl pineapple juice

2 cl freshly squeezed orange juice

Garnish: 1 thin orange slice

What matters

The egg white must be shaken *before* adding ice – otherwise it won’t bind properly and the drink will become watery instead of creamy. For an especially silky texture, separate the egg white from the yolk and use only the white. Important: The herbal liqueur shouldn’t be too dominant; a light vanilla or anise note is enough to enhance the fruity character without overpowering it. If you don’t like Bourbon, use a mild Blended Scotch Whisky instead – the smoky finish surprisingly complements the juices.

Variations

  • Angelic Fizz — Top up the finished drink with 6 cl chilled soda water and stir gently. This makes it livelier and extends the drinking time without ruining the balance. Garnish: lemon zest instead of the orange slice.
  • Herbal Angelic — Replace the herbal liqueur with 0.5 cl absinthe and add 0.5 cl simple syrup. This gives the drink a bitter, herbal note that is especially noticeable on the finish. Garnish: mint leaf instead of the orange slice.

Frequently asked questions

Can I leave out the egg white?

Yes, but the drink will lose its creamy texture and appear thinner. If you don’t want to use raw egg, you can substitute with 1 cl heavy cream or 0.5 cl coconut milk – the result will be less silky but still smooth.

Why does my Angelic taste watery?

Probably the egg white wasn’t shaken long enough *without* ice or the shaker wasn’t cold enough. The trick is to shake the egg white alone first until frothy, then add ice and the remaining ingredients.

Which herbal liqueur works best?

A liqueur with vanilla, anise, or a light herbal note works best. Overly intense flavors like caraway or licorice will overpower the fruit. If you’re unsure, use a mild vanilla-based herbal liqueur – it harmonizes with the juices and the Bourbon.
